Ingredients
- 1 knob of butter
- 1 tbsp plain flour
- 300ml milk
- 150g strong Cheddar cheese
- 300g macaroni
- 1 small red onion, very finely diced
- 1 pinch salt
- 1 pinch freshly ground black pepper
Instructions
Preheat the oven to 200°C (400°F/Gas 6). Melt the butter in a small pan, then remove from the heat and stir in the flour with a wooden spoon. Return to the heat and gradually add the milk, a little at a time, stirring continuously. Switch to a whisk (to avoid any lumps) and stir until the sauce begins to thicken. Remove from the heat and add 125g (4 1 / 2 oz) of the cheese. Season well with salt and black pepper.Cook the pasta in a large pan of boiling salted water for 10–12 minutes, or until it is cooked but still has a bit of bite to it. Drain, keeping back a tiny amount of the cooking water. Return the pasta to the pan and toss together. Mix with the cheese sauce, add the onion, and stir well.
Spoon into an ovenproof dish, top with the remaining cheese, and bake for 5–10 minutes, or until golden and simmering.
